Discover the roots of sake through fermentation.
Join us for an in-depth masterclass with Menno Tol, Master of Sake Sommelier and team member of the dynamic Dutch Hokkai Kitchen & Sake concept. Known for shaking up the sake scene in the Netherlands, Menno brings his deep knowledge and passion for sake to Belgian Sake Festival for a rare tasting experience.
This session dives into two of the oldest and most traditional fermentation starter ( moto ) methods:
Yamahai – bold, wild, latic and untamed
Kimoto– refined, layered, higher acidity and deeply rooted in tradition
Explore the subtle (and not-so-subtle) differences in aroma, acidity, texture and structure through 5 unique sakes, each with its own story, style, and brewing philosophy.
